We recently bought the Hobie Holder 14 Mk II daysailer and love it's simplicity. It was designed by Ron Holder and originally called the Vagabond. In the early 80's Hobie started production of this boat and it was called the Holder 14, then renamed to the Hobie One-14. It is now no longer in production.
It's an easy boat to trailer, rig, launch and sail. It comes with a spring-loaded centreboard, which will automatically retract should you hit a rock or other obstruction. The rudder is also on a similar system, and pops up or down with a quick tug of the tiller.

My boat came with a horrible mainsail, I trashed it and now use a one piece heavy duty aluminum windsurfing mast, boom and sails. I find I can take it our in the biggest of blows as long as I have the right size sail up.
In 30 knots the ride is wild, hard to control but incredible-off the wind. Upwind is just hard work.
Much less work than windsurfing and almost as much fun.

The Holder 14 was my first sailboat. The only experience I've had with another make was with the Capri 14.2 we had in our sailing classes. The Holder performs about the same. It has much more legroom than the Capri. It can easily hold 4 adults. Legroom with the Capri is a little cramped with anything over 2. The Holder (and Vagabond) are well made boats. Boat and trailer can fit in most garages. There are tons of them around. Check craigslist in your area. That's how I found mine.
