What I've been doing with varnish is 2 coats in a day, with sanding every 2 coats. So 2 coats, 4 hours between, then sand the next morning. You will get wrinkling if you don't thin the varnish - I add 1/3 thinner. Even then, you will get a few wrinkled patches where the varnish went on a bit too thick.
