HyLyte, I'd just spend $2/gallon and buy some deionized water gallons at the supermarket. Find a place to stash 'em and be done with it.

The traditional material for steam condensation coils is copper tubing, and you can buy rolls of thin-wall small diamter tubing at the hardware store, used for refrigerator or watermaker hookups. Copper has a natural anti-bacterial quality that plastics and stianless don't have, you don't want funk growing in the tubing.

Or, you buy a small "solar still", put a pint or two in it, and let it distill quietly in the sunlight while you are cruising. Low output, but readymade, no stove needed, it should be enough for your batteries and you can also grab it if you need to abandon ship.

I'd still opt for a couple of gallons from the supermart and take the easy way out. Water tanks leak, plumbing leaks, having a couple of gallon jugs of extra water shouldn't be a stopper.
