Then for the boom i was going to use a wood rod, and maybe find a way to roll it for reducing sail area.

I dont have lots of money to spend on a kayak sailing kit and all the ones I see have pretty small sails, My kayak is pretty stable but if i need to add outriggers i could id preffer something that could propel my kayak pretty nicely
