You are getting a list of great ideas.

You might not be able to do this without redoing the stainless tubing. I'm tall, my wife is short. We set the dodger height so that standing at the wheel she can see thru the windows, and I over it. Sitting on the rail we both can see through it. A separate handle(s) are very helpful. It's hard to stand behind the dodger and not grab it anyway, so might as well have a good spot to grab.

If you have lines lead aft as we do, we had some pockets built in on the sides of the dodger to put excess lines in.

I like a zip out window forward as well, so on a hot day on anchor I can get a breeze through easily without dropping the whole mess down.
