Our boat sails well at 35 degrees apparent, although rarely do I see more than 6 knots as we have a fixed three blade prop that really slows us down.
If I fall off say 10 degrees it will do 6-7 knots in 10-12 knots of breeze with the 135.
As mentioned above there are so many variables.

We have three rules;
No screaming.
No bleeding on the sails.
No slobbering on the charts.
