With your boat, you really don't NEED to steer using the tiller handle. The only thing you'd need is the throttle cable. I wonder if you couldn't make a temporary mount that you could put on the stern pulpit for the controls. As others have said, perhaps a structure (stainless steel?) kind of like a ladder that fits over the gunwals (sp?) at the back with a mount for the outboard. No, I wouldn't want to use it on a regular basis, or in really nasty seas, but for where you sail, something like that might work to get you to the nearest marina.
