We hip towed our Gemini using a 2.5hp a couple times (had fuel pump issues). It worked in flat water with no wind but didn't do diddly to even hold the bow into the wind during a blow. Gemini's weigh it at 10k pounds or less and have very little wetted surface but lots of windage.

I've got a 5hp outboard for the dinghy - I don't think it would do diddly squat to push my 20k pound Irwin around.

One thing I will say, light outboards on dinghies are useless to tow - you need to do a hip tow/push to control it.
