In case anyone's following this...here's the latest.
Took the head and exhaust manifold off, both look sound. I'm 99% sure I'm the victim of a poorly designed exhaust system. With the exception of about 6" of downhill exhaust pipe, the entire exhaust system is above the manifold discharge. With the static level of the water in the pipe, I figure I have less than a pint of capacity before I've got water backing up into places it shouldn't be (valve seats). Given the slow starting and long cranking required (before the carb rebuild), I think I was backing water up into the engine, hence the water in the oil.
I plan to build a proper exhaust riser with an injection elbow and get to going!
