i used a piece of pvc pipe glued to hull interior and filled with about 2 inches of oil---cooking oil--extra virgin olive wont come out unless i knock down.
If all you're looking for is depth, then I fully agree with Zee. Shoot-thru is fine, as long as your hull is solid. I ran for years on my previous boat with a transducer stuck to the inside hull inside a well (like your PVC pipe Zee), covered in water and held in place by a sponge. Kinda half-ass installation I know, but it worked flawlessly for the 8 years I sailed that boat.
Why go fast, when you can go slow.
