We built a "wine cellar" in the bilge, high enough it doesn't get wet, low enough that it gets "cooled" by the water temperature outside the boat. Built it out of that starboard stuff. Keeps reasonable temperatures for reds, we pull a white out now and then for the fridge before serving. Wine cellar temperatures are better sailing north of the Cape Cod Canal. Best in Maine.
