Here''s the little bit I know. The 27 is a good all around boat. It''s a bit cramped below compared to some other 27''s. The 30 has lots more interior volume compared to most other 30 footers, much less the 27. It''s hard to beat the accommodations on the 30. The 30 also reportedly has pretty nasty weather helm in a blow, so reef early. I''ve sailed on both, although many years ago, and can''t recall anything that different about how each sails. These 2 boats, along with the 22, really established Catalina. If you''ve narrowed it down to these 2 boats, go for the 30 if it''s within budget.
