Dirt and mold can be problems, but to two factors that present the greatest risks to your sails are chafe and UV damage. For chafe prevention make sure that your sails on the boom are tied with straps around the sails only and not with straps around the sail and boom. A tuck of sail that is tied between the wrap line and the boom can chafe away with the constant rock at the dock. The lines holding the sail cover would normally be around the boom, but once again, there should not be a fold of sail left between these straps and the boom. For the UV protection just be sure that the whole sail is covered, particularly without the clew sticking out aft.
