My Pearson uses something like these for cockpit drains:
Perko 0285DP | Fisheries Supply

and these in 1" for deck drains:
Flush Head Marelon Thru-Hull - Fully Threaded - Forespar | Fisheries Supply

Defender has them too if you search for cockpit drain:
Forespar Marelon Flush Head Deck Drain / Thu Hull with Screen

Since all of these are flush/recessed you'll probably need to do some core removal and fiberglass work to make a nice recess for the drains.
