It looks like a great idea.
It seems like the two table tops you made could have been just hinged at the edge of the settees, then to fold it up all you do is remove some type of center brace and they drop down flat against the settee. One less heavy thing that might be loose and flying around the cabin in a storm. On a sailboat we always need to consider loose items, big heavy ones can cause a huge problem.
I'm in the process of preparing for a circumnavigation, any ideas like this are good to share. Jon
