Yes, the side of the boat the wind hits first will determine if you are on a port or starboard tack, but only most of the time. If the wind is directly astern (not how I prefer to sail, if I can help it), the tack is determined (by convention) as the side opposite where the boom is carried.
Here''s a question: you are on a run with boom out to port (i.e a starboard tack), and you turn slightly to port, but not so much that you jibe. Now you are sailing "by the lee." Are you still on a starboard tack? I would think so, but would appreciate other responses.
