In my experience, it can vary among the same model of head a bit, depending on the installation and the usage. The length and design of the head intake line can affect it, as can the speed of the pumping. Most of these pumps work best at a moderate rate of speed, rather than the faster pumping that some n00bs trying to flush the head as quickly as possible will use.

Actual use will also vary a bit, depending on how much excess water is pumped to "clear the lines" by each person.

What size is your holding tank, and how long did it take to fill up?? It is sometimes easier to ballpark how long a holding tank will take to fill up on average, than how much water is moved with each flush.
