I'm inclined to think it's more of a windage issue than displacement. But I don't know. Certainly having more weight in the boat has to slow things down a bit. Heavier boats are also often less initially stable so that would work in their favor also. But I think motion at anchor is not the same thing as a boat sailing back and forth on its rode.
