Everything that can come off should to reduce windage as much as possible. Are you going to be on the hard or in the water?

I wouldn't remove the mast since destepped masts often become donor masts for random people.

I prefer an AC over a dehumidifier since they use about the same amount of electricity, but also keep things cool. A small window unit is a favorite for this.

Expect small things to be stolen, particularly anything not inside the boat, generally there are thieves of oportunity not professionals, so locking everything you can, taking things out of drawers and into lockable chests that are secured will help.
