The WaterLog is supposed to have an electric motor attachment, so you can use it when the boat is not moving. However, I'd also point out that many anchorages are too polluted to really use a watermaker without damaging the membrane. Bacteria and oil both will damage the osmosis membrane on all of the RO watermakers that I know of.

Ditto the towed generator (I can see a duo, but sole purpose towed, not on my weight restricted Cat.).
