Well, I have crewed for a few folks I've met on the internet. Some as far back as the mid 90's. I guess it's like anything in life. Talk to them a bunch, ask some questions, listen to your gut. And if you show up and the boat doesn't look seaworthy... bail out.
I've had good luck w/ lengthy phone conversations; eventually you can tell if someone is BSing you or not about their experience.
And if you've got some fairly wide ranging experience yourself, even if it's just daysailing or local racing, you can make a pretty good assessment.

PS. Wannna go sailing? I'm all set to go on my GF41; should be able to circumnavigate in a week or 10 days at the most. Why when I was running clipper ships......
