You may also be able to cut/grind away the damaged/bent parts, and have something fabricated that will bolt onto the existing remaining parts.

This would avoid having to remove the stem fitting (probably a nasty and difficult job). You may be able to drill and tap the stem fitting to accept your new roller. Alternativle you could cut away the damaged bits in such a way to incorporate one of the standard bow roller assemblies sold by West Marine and others. Some of the longer ones would allow you to fasten the inboard end through the deck.
(with the appropriate reinforcement and backing plates, of course)
