If you've poured oil into the head and pumped it through to the holding tank, it will sit on top of the contents of the holding tank. The nasty head smells are usually caused by one of two things: Rotting sea life, or Anaerobic Bacteria, which is why your head holding tank has to be vented well.

If the holding tank isn't basically empty at this point... the oil will prevent oxygen from reaching the contents of the holding tank, promoting the growth of the anaerobic bacteria, and killing off the aerobic bacteria.
