Crossed linked polyethelyne (PEX)'s flexibility and strength at temperatures ranging from below freezing up to 200 degrees Fahrenheit makes it an ideal piping material for boats. Keep in mind that it is available in both rolls and in straight lengths. The roll product can be unweildly without a unrolling table so the straight lengths should also be considered as they are forgiving and flexible. The other reason to consider this form is that it can be purchased in in 10' legths rather than expensive multi length rolls. Most boaters should have a heat gun in their tool arsenal and so one should be kept handy to remove kinks (the only way you can without cutting out the kink).
