You could make one bank out of the two batteries you have and then carry one of those portable jump-starter carry packs that you can jump directly to the starter if the engine won't start. They don't last forever but they do work and they're "cheap as chips".
I get a cold shiver up my spine at the thought of batteries not doing what you want when you want - I've had too much of that.
