Oh, and incase you didn't know, if you would've eased the tension on the starboard jib sheet, and pulled in on the port sheet, it will sail better.
Flatten out the sail I guess? That makes sense. I pretty much set-it-and-forget it with the jib, as I was single handing and tacking frequently.
If I find a deal on a pair of cam cleats I think I'd rather run the jib sheets through them than have to monkey with jam cleats.
I learned to sail on Lightnings which have about a dozen more lines and all of them are cam cleated (and most are adjustable from either side of the boat) So I'm not as wild about this whole jam cleat thing.
