Sir Francis Chichister has been mentioned previously, but the most amazing autobiography I have ever read is his "The Lonely Sea and The Sky", now sadly out of print, but absolutely worth the effort to track down. Half about his early days as a pilot, as well as the beginnings of the Trans-Atlantic Solo sailing race.

And I don't know if it counts as fiction or not (ahem), but I really enjoyed "The Incredible Voyage" by Tristan Jones. (He's kind of like Papillon - you never know quite whether to believe him or not...)
