The impeller is either on a spline shaft or is keyed.. and should slide up and off the shaft (rubber bit and a metal inner part that may not be totally visible, or have a rubber layer on it. There may also be a rubber disc that fits into the center of the impeller which will come off so you can see the shaft itself.

Protect the edge of the pump casing, and use two flat blade screwdrivers to "bite" into the rubber from opposite sides and try prying it up and out. Alternatively maybe try to grip the impeller hub with some slip joint piers and pull, depending on your access.
