Nail, I read about campers who dehydrate hamburger by mixing 1/2 cup bread crumbs with 1 pound of hamburger then heating in a skillet until it browns. Next blot the grease off of it by letting it sit on a paper towel then dehydrate it in a food dehydrator. The bread crumbs make the hamburger tender when it rehydrates in your chili. Edit - you have to use lean beef for this, 93/7 recommended.
