You seem to have more than enough food but there's a couple of things you might want to consider. First, as has been mentioned, take eggs. Really fresh eggs will last a long time even without refrigeration and eggs are easy to cook -- of course if you don't like eggs then forget it. The other is you should have planned a number of one-pot meals where you can just throw the stuff into the pot, clamp the pot to the stove (unless you have a SeaSwing or equivalent) and get quick hot food with a minimum of fuss. It's best to have a pressure cooker which not only makes cooking faster but also has a lid that will stay on literally come hell or high water.
When you get in any kind of seaway you probably want to prepare hot meals with as little work as possible.
