Of course if it is just generally stench..and not specific to mold, mildew, bilge water or the head.... you can go down to your local coffee shop and get about 10 lbs. of used coffee grounds. Put them in large open containers and leave them out in the boat for a few days. They'll neutralize and absorb most odors... Works great for cars, basements, and boats. Just make sure the containers are large enough and stable enough that they don't tip over.....
