There is a good book on Celestial navigation called
The Complete On-Board Celestial Navigator, which is a pretty good teaching book as well as has the tables required for 2003-2007. You can read more about it
here. I would also pick up the Sextant Handbook, which you can see
here. It is good for calibrating and checking your sextant.
