I just ran across this series of videos from Yachting Monthly - thanks to Dylan Winter. This stuff is seriously top-notch.
The lads take out a Jeanneau 40 (I think) and proceed to rip it apart with a dismasting/jury rig, capsize/roll, hole below the waterline, etc. They then take you through the real use of all the tools and techniques we always hear about.
