For the launching issue, it may be possible with a smaller boat (we do it with fishing boats) if you disconnect the trailer from the tow vehicle. It's a 2 - 3 man operation, but you tie the winch post to the hitch with a stout piece of rope, and while maintaining tension with the vehicle you slowly push the trailer down the ramp. When it floats free just tie it up and use the vehicle to haul the trailer back out and reconnect. Reverse the procedure for retrieval. You will need a skid of some sort on the under side of the trailer tongue to keep the coupling from dragging and filling with mud because most trailer jacks won't like being (ab)used in this manner.
