Since the real challenge is getting the boat stopped, would a big snap shackle not do at first? Tie it on a length warp, reach over, then snap it over the eye?
You could even put two of them of different sizes on the same line, in case the mooring eye is too thick, or the hole in it too small.
Later, with the boat stopped, you could use something more secure, or double up.
