It would depend on if it were beef or dairy I suppose.
135 mph would be my guess, since people are about 120 mph and it's based on surface area to volume ratio IIRC (similar density). Air resistance goes up dramatically with only slight increases in speed, hence the smallish, 15 mph increase, even though the cow is much heavier.
