Both USSailing and American Sailing Association offer sail training. ASA has weekend to week-long courses depending on how much time you have. Their website has a locator so you can choose where you want to take the course.

Since you're doing this over the winter, you might want to consider the southeast somewhere. Some of the week-long training has the students live on the boat for the week.
