I like the Fagor brand of pressure cookers...as for size, it depends...if you're just sailing alone or as a couple, a four or six quart is probably all you'll need. If you have more people, an eight quart is probably the way to go.
To use a pressure cooker as a stove top oven, you need a trivet and a baking pan that fits inside the pressure cooker. You don't want the baking pan to sit on the bottom of the pressure cooker, and you don't want a trivet that will transmit the heat readily...so no metal trivets.
I have a few good cookbooks, but they're on the boat, so I can't say what they're called.
Solar ovens aren't all that feasible on a boat...the wind tends to rob them of their heat...so they don't really get up to temperature all that well.
