I found this recipe on the net and thought it would be a great treat to take along on a weekend cruise!
So I tested it. And much to my pleasure, I was correct!
Best Cinnamon Bread Pudding
Cinnamon roll bread pudding
Preheat oven to 350*
2 qt baking dish and an oblong cake pan
7 C large diced bread (does not need to be stale)
1 c walnuts chopped (optional I didn't use)
1 c raisins
4 eggs slightly beaten
2 c milk
¾ c heavy cream
1/3 c amaretto (I used whiskey)
1 tea vanilla ext
2 tea cinnamon
½ c sugar
Pinch salt (about 1/8-1/4 tea)
Coat 2 qt baking dish with butter, In a large bowl place diced bread and raisins, in a seperate med mixing bowl mix eggs slightly, add milk, cream, alcohol, and vanilla. Combine dry ingredients (sugar, cinnamon, and salt) mixing well and add to liquid ingredients mixing well. Pour over diced bread and coat the bread with the egg mixture by gently folding, letting the bread absorb the egg mixture for a few minutes. Pour into 2 qt baking dish. Place baking dish into larger oblong pan and pour boiling water around exterior of 2 qt halfway up the side.
Bake 45 min. in pre heated oven.
While it is cooling
Rum or Whiskey sauce
1/2 c milk
1/2 cup heavy cream
1/3-1/2 c butter
1/2 c sugar
1/2 c powdered sugar
1 tea vanilla
1/3-1/2 c rum or whiskey (your favorite)
Combine first five ing, heat gently till hot, not boiling but just starting to simmer. Reduce heat so you do not scorch stirring appropriately for 10-15 min. Add vanilla first, stirring, then alcohol stirring till mixture is uniform.
I made this this weekend and it was sooooooo good!
Once cooked it is easy to store for transport and very delicious!
