I wish i could offer more insight as to why cast iron is better, but after the first time my wife used the stove the first thing she said was we need to get cast iron skillet and pot....thats what we did and she has been happy. I think its like others have stated, heats evenly and once heated retains heat....Admiral is happy using the alcohol
