My girlfriend and I are planning in 3 years to sail from Victoria, Canada to the Caribbean, the across the pound and spend 6month to a year in the Med. Also, we are planning to live aboard for a year prior our big trip. Can anyone provide me with an average monthly cost, including insurance, to live aboard? We are looking at 40' to 44' boat.

You might want to look at some of the other threads that address this issue. Depends on whether you want a multihull or a monohull. Given where you're going to be sailing, a multihull might be a better option.
