Cartoppable Sailing Dinghy w/ Jib

OK, I'd appreciate your ideas on a lightweight cartoppable sailboat that has a jib. If I lived in England, I'd buy a used Tinker Traveller, but I'm in coastal California and these are rare out here. The Walker Bay with the high performance sail kit is one of the few I can think of that I can obtain out here. What else is there?
Thanks in advance for any and all suggestions.
I just want to be able to drag something to the beach and take off from there and I want a jib for upwind sailing and general practice.

A small lightweight sailboat you can put on a roof rack on top of your car that takes no more than two people to lift into place and then take off when you get to your water destination.
