Were Sharks design changed to add Weight?

Thinking about buying a Shark 24, and guy I know who has one told me that those with hull #s after 1000 were 500lbs heavier than the originals. Does anyone know if this is true, and if so why would they do that on a racing boat?

This is highly unlikely. That number roughly corresponds to the C&C built Sharks (after Hinterhoeller merged to form C&C). Here is a C&C brochure from that era that lists the displacement as 2,200 lbs. which is the usually published figure.

I believe the class organization specifies a minimum boat weight of 2,100 lbs., therefore an additional 500 lbs. would be an almost 25% increase.
