Sailing off NZ around May as a ship's boy...

I've acquired a bit of experience years back learning sailing on tiny boats, or going at sea on a modest size sailing boat a few times. Later one, I often used motor boats along the coast. It certainly provided me with sea legs.
I'd so like to learn sailing properly and in the blue water.
Being a ship's boy I expect to pitch in and can only hope to make myself valuable on the deck, or maybe in the galley. I'm okay to share the costs even though an unpaid position would be welcomed.
I plan to sail off NZ around May and don't have any destination in mind safe for New Caledonia, ultimately.

I'm 33 yo, French speaker with a rather good English. I'd be delighted to surfing, diving, fishing, exploring...

If you feel like picking me up...
Thanks for answering...
