Jeff H,
Welcome to sailnut.
Our resident curmudgeon is busy putting his boat in the water so I'll pinch hit for a moment.
A little more information about you might help you find an opportunity to get aboard. For instance: your location (approx.), your age (approx.), your skills (cooking, mechanical, medical (CPR), musical etc.) and your skill level (seems you want to learn so I'd assume you're a beginner).
People can be pretty particular and peculiar. Some folks don't even want a smoker on board even if they know the ropes, so to speak.
Mostly important is where you are geographically as there is even sailing around Nashville, TN. There may be some opportunities closer to your home rather then a plane ride away.
My best.
