Curried Chicken Salad

Main Dish: This is simply the best chicken salad you will ever taste. Flavors literally explode in your mouth!

4 boneless, skinless, chicken breasts (or substitute 2 6-ounce cans of chicken)
1/4 cup sour cream
1/4 cup mayonnaise
1 can (11 ounces) mandarin oranges (drain oranges and set aside 1/4 cup of juice)
1/4 cup almonds sliced (or walnuts)
3 green onions, finely chopped
2 celery stalks, finely chopped
1 tsp. curry powder
½ tsp. salt
½ tsp. fresh ground pepper

Boil chicken breasts in water 10 minutes or until done. Chop chicken into ¼- to ½-inch cubes. Pour mandarin orange juice over chicken and let cool. Add to chicken all remaining ingredients and stir. Serve on crackers as an appetizer. Great in sandwiches or delicious with a green salad for lunch. Wonderful to prepare in advance for offshore passages.
