Banana Crepes

Main Dish: A breakfast treat or a simple desert to whip up. If you're lucky enough to have whipped cream or ice-cream available, top off before serving.

Crepes
1 Cup Flour
2 Tbsp Confectioners sugar
¼ Tsp. Salt
1 Cup Milk
2 Eggs
3 Tbsp Butter or margarine (melted)
Banana Filling
¼ Cup Butter or margarine
¼ Cup Brown Sugar
¼ Tsp. Cinnamon
¼ Cup Light Cream
1 Tsp. Vanilla Extract (or rum)
4 to 6 Bananas, halved lengthwise

Make your crepes first, and keep warm in the oven. Combine flour, sugar and salt in a mixing bowl. Add milk, eggs and butter and beat until smooth. Lightly grease and heat to medium high a 6-8 inch skillet. Add 3 tablespoons of batter and quickly spread to cover bottom of pan. Cook until lightly browned, then turn and repeat.

Remove cooked crepe to warming pan in oven, and continue process until batter is used up. Re-grease skillet as necessary. To make filling, melt butter together with brown sugar and cinnamon in large skillet. Add cream & vanilla extract, and cook until slightly thickened. Add bananas, and cook for about three minutes, spooning sauce over the top. Place half a banana in each crepe and roll up. Drizzle sauce over top of each.
