Baked Carrots
<HTML><!-- eWebEditPro 1.8.0.2 --><P>Cori, from the s/v Fantasy, made these carrots recently for a cruiser's pot luck, and were enjoyed immensely by everyone. </P><P>For a large covered dish for a potluck:</P><P>2 lbs Carrots <BR>½ lb Butter or margarine <BR>1 Cup Sugar <BR>3 Tbsp Flour <BR>1 Tsp. Baking Powder <BR>¼ Tsp. Cinnamon <BR>3 Eggs </P><P>Boil carrots in water until soft, then drain, return to pot and mash. Stir in butter, sugar, flour, baking powder, and cinnamon. Beat 3 eggs, then fold into mixture. Place all in a greased 1 quart baking dish. Bake at 400 degrees F. for 15 minutes, then reduce heat to 350 degrees for 45 minutes. </P></HTML>
