Baked Carrots

Cori, from the s/v Fantasy, made these carrots recently for a cruiser's pot luck, and were enjoyed immensely by everyone.

For a large covered dish for a potluck:

2 lbs Carrots
½ lb Butter or margarine
1 Cup Sugar
3 Tbsp Flour
1 Tsp. Baking Powder
¼ Tsp. Cinnamon
3 Eggs

Boil carrots in water until soft, then drain, return to pot and mash. Stir in butter, sugar, flour, baking powder, and cinnamon. Beat 3 eggs, then fold into mixture. Place all in a greased 1 quart baking dish. Bake at 400 degrees F. for 15 minutes, then reduce heat to 350 degrees for 45 minutes.
