Rum "Crew" Brownies

If you want to ensure a crew spot on a boat (particularly a J/27 named Island Dog), just take these brownies aboard one time and you’ll soon become a regular.

3/4 Cup butter
1-1/2 Cups sugar
1/4 Cup rum
3 eggs
1/2 Cup cocoa powder (unsweetened)
3/4 Cup flour
1/2 Tsp baking powder
1/4 Tsp salt
1/2 Cup pecans or walnuts (optional)

Cream together butter and sugar. Add the rum and 3 eggs, one at a time.

In a separate bowl, combine together the cocoa powder, flour, baking powder and salt. Then add the dry mixture to the first mixture.

Stir just until all particles are moistened.

Pour into an 8-inch square greased pan and bake for 30 to 40 minutes at 350 degrees F. The center part of the mixture should be slightly under cookedwhen taken out of the oven, but it will cool a moist and fudgy consistency.
